These onion rings are the bee's knees, you gotta try 'em.
You know the deal: business first, small talk later.
INGREDIENTS
1 cup all purpose flour
1 tbsp paprika
2 tbsp garlic powder (divided)
1 tbsp salt (divided)
1 cup buttermilk
2 eggs
1 cup panko bread crumbs
1 large or 2 smaller vidalia/sweet onion(s)
Avocado oil spray (optional)
INSTRUCTIONS
1. Prepare the onion: slice into 1/4-1/2 inch thick rings and place on a paper towel to remove any extra moisture.
2. Prepare the dredging bowls:
Bowl #1, combine flour, 1/2 tbsp salt, paprika and 1 tbsp garlic powder.
Bowl #2, mix buttermilk, egg, and 1/2 cup of above flour mixture. Whisk thoroughly, ensuring no clumps.
Bowl #3, combine panko breadcrumbs, 1/2 tbsp salt, and 1 tbsp garlic powder, mix with a fork.
3. Using one fork per bowl, dredge the onion rings in the flour, then the buttermilk, then the panko.Try to make sure to really tap off the excess flour. Place onion rings on a parchment paper lined baking sheet and freeze for ~30 minutes.
4. Dip cold onion rings back into the buttermilk batter and place on a baking rack over a baking sheet to let extra batter drip off. Put them back into the freezer for 2+ hours until batter is no longer wet.
5. Preheat AirFryer at 390ºF for 3 minutes. Place in single layer and cook for 6 minutes. Remove basket, give them a gentle shake and spray with avocado oil. Cook for another 4 minutes.
Tips & Tricks
-Crush the panko with the bottom of a wine bottle or jar to make the breadcrumbs smaller.
-Add whatever spices you like! I often add parsley, chili powder, onion powder and other spices I have kicking around. Please for the love of all that is holy: SPICE YOUR FOOD. (Lookin' at you, Susan).
-I'm sure you've noticed that this recipe insists on a second battering while most other recipes do not. Please don't skip this step! It gives a nice even and smooth coating, similar to a restaurant style onion ring. It's the only method that produces this result with an air fryer.
Christmas morning 2020, like millions of others, I joined the Air Fryer club. After months of humming and hawing over if we had enough space in our little, tiny apartment kitchen, Jordan's parents gifted us a Ninja Air Fryer. Originally, I had no idea how these things worked. Judging by the name, I assumed it would behave as a deep fryer would (another kitchen gadget I had little to no experience with). I was very wrong. The first time I made spring rolls they blew up and got all warty like a toad. It definitely took some experimenting.
My main goal was to make comfort food healthier, and my first mission (which I chose to accept) was onion rings. So I hopped on Pinterest and started perusing recipes. All of them called for dredging stations and panko breadcrumbs, which I was expecting. What I wasn't expecting was the absolute crime scene that was the top of my mouth. Panko? More like an army of miniature Edward Scissorhands laying siege on my hard palate. Captain Crunch would've been proud of the way these onion rings woke up and chose violence. Something had to give.
So I started experimenting at about 7 pm. By 1:45am I had done it. I had created a healthier onion ring that left all the other Pinterest recipes in the dust, and the roof of my mouth unscathed. A smooth and crunchy outer shell with a soft onion nestled inside, that's all you need in life, right?
